Combine all of your wet ingredients in a mixing bowl.
Add your dry ingredients to the wet and stir well to combine. (I like to use a silicone or rubber spatula).
Put dough in the fridge to rest for 30 minutes.
Meanwhile, pull out your air fryer and spray well with oil (olive oil/coconut oil/avocado oil all will work just fine). Be sure to spray it well!
Using a cookie scoop, portion out the dough and roll into small balls. Place in to your oiled air fryer. Make sure there's a tiny bit of space between each ball. They will expand/ puff up a bit! Depending on the size of your fryer, you may need to make 2 batches.
Turn your air fryer on to 350 degrees F and fry the donuts for 7-9 minutes. At around 4-5 minutes, shake the fryer basket. You'll know when the donut holes are done when the exterior looks puffed up and crisp with a few crackles.
Let the donut holes cool and make your vanilla glaze. I recommend starting with 1/3 cup of powdered sugar, 1 tsp vanilla, and 1 tbsp of non-dairy milk, but feel free to play around with the measurements to get your desired consistency. If you feel it's too thin, add more sugar. If you feel it's too thick, add more milk!
Be sure to let the donut holes completely cool before adding the vanilla glaze (otherwise it will run right off). Once cool, use a spoon and drizzle the donuts liberally. Add sprinkles to top. The glaze will harden and then dig in! Enjoy! Store on counter for 1-2 days then transfer to fridge in a covered container.
